Chili is my go to.
I made a veggie (vegan without the toppings) version with kidney & pinto beans, tomatoes, onions, garlic, green beans, and zucchini. Like soup, chili is a catch all.
I think my mother is law call it COR- clean out refridgerator.
Corn bread from a mix (lazy today) is jazzed up with fresh corn & topped with a little brown sugar.
